Carrot Moong Dal Salad is a tasty and healthy Indian salad. It is protein rich and also nutritionally rich because of carrots and dal. It is also very easy to prepare. In Karnataka, they called ‘Carrot Kosambari” I came across this while traveling around in South India and I fell in love with this salad the moment I tasted it! So here it is, deconstructed for all you lovely readers! So try this healthy salad and share your comments!

Carrot Moong Dal Salad

Furthermore, I would like to share some of my suggestions for carrot moong dal salad. Firstly, wash and soak moong dal in a bowl for 20 to 30 mins. Then drain the water completely from the soaked dal. You can also add the sprouted moong dal instead of a  yellow slitted gram to this salad. Finally, adjust the quantity of lemon juice as you like.

  1. 1 cup grated carrot
  2. 1/4 cup moong dal
  3. 2 tbsp grated coconut
  4. two green chillies finely chopped
  5. 2 tsp lemon juice
  6. salt to taste
  7. 1 tbsp finely chopped coriander leaves          Instructions
  8. Wash and then soak moong dal in a bowl for 20 to 30 mins.
  9. Then drain the water completely from soaked dal.
  10. In a wide bowl, combine grated carrot, soaked moong dal, grated coconut, finely chopped green chillies, lemon juice and salt.
  11. Mix well until well combined.
