Carrot Moong Dal salad is a tasty and healthy Indian salad. In Karnataka, it is it is called as Kosambari. It is not only healthy but also incredibly delicious. Made with fresh vegetables and lentils, kosambari is a perfect way to add some flavor and nutrition to your diet.

Kosambari typically consists of soaked moong dal (mung beans) mixed with grated carrots, and coconut. The salad is then flavored with a mix of lemon juice, salt, and spices, such as mustard seeds, cumin, and green chili.

Furthermore, I would like to share some of my suggestions for carrot moong dal salad. Firstly, wash and soak moong dal in a bowl for 20 to 30 mins. Then drain the water completely from the soaked dal. You can also add the sprouted moong dal instead of a  yellow slitted gram to this salad. Finally, adjust the quantity of lemon juice as you like.

Carrot Moong Dal Salad

Ingredients

  • 1 cup grated Carrot
  • 1/4 cup Moong Dal
  • 2 tbsp grated Coconut
  • 2 finely chopped Green Chillies
  • 2 tsp Lemon Juice
  • to taste Salt
  • 1 tbsp finely chopped Coriander Leaves

Instructions

  • Wash and then soak moong dal in a bowl for 20 to 30 mins.
  • Then drain the water completely from soaked dal.
  • In a wide bowl, combine grated carrot, soaked moong dal, grated coconut, finely chopped green chillies, lemon juice and salt.
  • Mix well until well combined.
  • Finally, garnish it with finely chopped coriander leaves.
