Furthermore, I would like to share some of my suggestions for making perfect crepes. Firstly, combine together flour, sugar and salt in a wide bowl, until combined. In a separate bowl, whisk together eggs, milk, melted butter and vanilla essence until incorporated. Make a well in the center of the flour mixture, gradually pour the egg mixture whisk until smooth. Strain if necessary to remove any lumps. Cover and set aside for 30 mins to 1 hour.

Next important thing is how to cook the perfect crepes. I have never owned a special crepe pan for this recipe. So don’t worry about buying a special pan to make crepes. You can also use your flat 8 or 9 inch non-stick pan to make these crepes. Heat a pan over medium heat, until a little water dropped on the pan sizzles just a little. Then lightly butter the pan. Lift the pan from the heat and pour a small ladle of batter in the center of the pan.
Tilt and swirl the pan to form an even layer and cook it for about 1 to 2 mins until the edges start to curl and the top looks almost dry. Then flip the crepe and continue to cook for 30 seconds or until it becomes golden brown in color.

- 1 cup all purpose flour (130 g)
- 2 tbsp white sugar
- 1/8 tsp salt
- 2 large eggs at room temperature
- 1&1/4 cup (300 ml) milk at room temperature
- 2 tbsp (30 g) melted butter, cooled to room temperature
- 1 tsp vanilla essence For Mixed Berry Sauce
- 150 g mixed berries
- 2 to 3 tbsp white sugar or to taste
- 1 tsp fresh lemon juice Mixed Berry Sauce
- Combine berries, sugar and lemon juice in a saucepan over medium heat.
- Cook for about 5 to 7 mins or until the berries break down and thick.
- Then remove from the heat and keep it aside. Crepes
