Ingredients

  • 1 medium sized carrot, sliced
  • 2 cups medium broccoli florets
  • 1 cup red, green or orange bell peppers, seeded and sliced
  • 1 medium sized zucchini, diced
  • 3 garlic cloves, peeled and chopped
  • 1 medium sized onion, sliced
  • 1/2 tsp red chilli flakes
  • Salt to taste
  • Black pepper powder to taste
  • 1 tbsp olive oil

Preparations

  1. Add carrot slices to a microwave-safe bowl and microwave it for one minute and keep it aside.
  2. Then boil water in a saucepan. When the water starts to boil, add chopped broccoli florets and cook it for a minute and then drain the water and keep it aside.

How to make Stir Fry Veggie

  1. Meanwhile, heat the olive oil in a large non-stick skillet or wok, over medium heat.
  2. When the oil heats, add chopped garlic and fry until lightly browned.
  3. Also, add sliced onions and fry till softened.
  4. Then add red chili flakes and stir fry for a few seconds.
  5. Then add sliced bell peppers and zucchini and stir fry for about one minute.
  6. Now add blanched broccoli florets and half-cooked carrot slices.
  7. Further, add black pepper powder and salt to taste, stir fry for about 2 to 3 minutes or until vegetables are crisp-tender.
  8. Serve it with white rice or roti.
