Eggless Orange Cake
Serves 8
Preheat oven: 180 degrees C
Bake: 35-40 mins
Ingredients
- 165 grams (1&1/4 cups) plus 1 tablespoon for coating tutti frutti All purpose flour
- 1/2 tsp Baking soda
- 1&1/2 tsp Baking powder
- Pinch Salt
- 1/2 cup (150 grams) Tutti frutti
- 60 grams (4 tbsp) Unsalted butter
- 1 cup Sweetened condensed milk
- 3/4 cup Fresh orange juice
Instructions
- Preheat the oven to 180 degrees C then place the oven rack in the center of the oven.
- Butter and flour or spray 9-inch loaf pan then line the bottom of the pan with parchment paper.
- Melt the butter and cool it to room temperature.
- Finally, toss the tutti frutti in 1tbsp of flour and keep it aside. Reserve some tutti frutti for topping.
- In a wide bowl, whisk together flour, salt, baking soda, and baking powder until well combined.
- Whisk together melted butter with condensed milk until incorporated.
- Then add the orange juice and mix well.
- Now add the flour mixture gently to the orange juice condensed milk mixture in three additions.
- Gently fold into a thick batter.
- Then add the tossed tutti frutti to the batter and fold gently.
- Pour into a greased loaf pan and level it.
- Sprinkle with some tutti frutti on top.
- Bake it for about 35 to 40 mins or until a toothpick inserted in the center of the cake comes out clean.
- Remove from the oven and cool it for about 10 mins before removing from the pan.
- Slice it up and serve. Enjoy!
