This Beetroot Salad is a delicious and healthy salad. What do you get when you mix in some beautiful baby spinach with some tangy green apples, colorful Beetroots, cubes of creamy feta cheese and a handful of walnuts, sprinkled with a sizzle of my custom salad dressing. Well, look ahead to find out! This is the yummy salad of the day! So you try it out and share your comments! You can also serve this colorful salad along with grilled fish and spicy chicken steak.

Beetroot Salad

I like this healthy beetroot salad because beets are good sources of Iron and Folate. They are low in calories and also high in valuable vitamins and minerals. In fact, they contain a bit of almost all the vitamins and minerals that you need. It is also considered to be one of the best Brain Foods.

Furthermore, I would like to give some suggestions for this beetroot salad. Firstly, wrap the beetroots loosely in two individual aluminum foils. (No need to pat dry them before wrapping) Then roast them in a preheated oven for about 50 to 60 mins or until a fork or skewer inserted in the center of the beet slides easily. Adjust the baking time based on your oven, keep an eye on the beets all the time because it might be overcooked!

Secondly, toast the walnuts until a nice aroma comes. Thirdly, Place all the veggies in a wide bowl and pour the dressing over the salad and toss well until the veggies are well coated with dressing. Finally, add the feta cheese cubes over the veggies and serve the healthy beetroot salad immediately.

  1. 2 medium sized beetroots
  2. 1/2 cup feta cheese cubes
  3. 2 cups baby spinach leaves
  4. 1 green apple
  5. 1/4 cup walnut          For Dressing
  6. 4 tbsp honey
  7. 2 tbsp vinegar
  8. 4 tbsp olive oil
  9. pinch of salt
  10. 1/4 tsp pepper powder
  11. 1/2 tsp red chili flakes          Instructions
  12. Preheat oven to 200 degrees C.
  13. Cut off the leaves and stems of the beetroots and scrub the beets thoroughly.
  14. Then wrap them loosely in two individual aluminum foils separately.
  15. Place the wrapping beets on a baking sheet and roast for about 50 to 60 mins or until a fork or skewer inserted in the center of the beet slides easily.
  16. Set the beets aside until cool enough to handle.
  17. Peel off and then cut into small chunks and keep it aside.
  18. Toast the walnuts in a preheated oven (175 degrees C) for about 7 to 8 minutes or until browned.
  19. In a small bowl whisk together all the dressing ingredients until incorporated and set aside.
  20. Core and slice the apple  into matchsticks or julienne.
  21. Place the spinach, green apple matchsticks, beet chunks and walnuts in a wide salad bowl and pour the dressing over the salad and toss well until the veggies are well coated with dressing.
