If you use hot water, then it will kill the yeast. so try to use lukewarm water. Sugar also helps to activate the yeast.Then add 1 cup of all-purpose flour, whisk well manually and set aside for 15 to 20 mins. or until the mixture is foamy.
  • Secondly, while kneading the dough, add 1&1/2 cups of all-purpose flour, mix at low speed (no.2), until the dough is soft and silky. If the dough is sticky, then add the remaining 1/4 cup of flour little by little. Knead the dough for about 5 to 6 mins or until slightly springy and soft.
  • Then, making pita bread is not difficult, but it will take 3 hours because the dough needs to rise twice. So try to place the dough at room temperature or in a warm place.
  • Finally, Place the pita bread on hot skillet and cook until it begins to puff up and the bottom has brown spots and blisters. Then flip it, cook for 2 mins and flip back to original side, cook for another 30 seconds. Pita bread will begin to puff up and fill with hot air. Now remove from the heat and do the same process for the remaining.

Ingredients

  • 130grams all-purpose flour (1 cup)
  • 2 tsp active dry yeast or 1 pack
  • 240ml warm water (1 cup)
  • 1 tsp sugar
  • 1 tsp salt
  • 2 tbsp olive oil          

For Dough

  • 1&3/4 cup all purpose flour (230 grams)
  • 1 tsp olive oil          

Instructions

  • Place dry yeast, sugar and 1 cup of warm water in the bowl of electric stand mixer.
  • Then add 1 cup of all-purpose flour, whisk well manually and set aside for 15 to 20 mins. or until the mixture is foamy.
  • Then add 2 tbsp of olive oil and 1 tsp of salt into the mixture, mix it well until combined.          

For Dough

  • Place the bowl in the stand mixer and insert the hook attachment.
  • Then add 1&1/2 cups of all-purpose flour, mix at low speed (no.2), until the dough is soft and silky.
  • If the dough is sticky, add remaining 1/4 cup of flour little by little. Knead dough for about 5 to 6 mins or until slightly springy and soft.          

How to make pita bread

  • Bring the dough to the floured workspace, knead gently and make a ball.
  • Then apply 1 tsp of olive oil over the dough, place it in the bowl and cover the bowl with aluminum foil, keep it aside for 2 hours or until doubled.
  • Now place the dough on the floured workspace, gently press it down with your hands and then divide it into 8 equal portions.
  • Also form each piece into a small round ball, simply by pulling dough from the sides and tucking the ends underneath the bottom.
  • Then cover dough balls with lightly oiled plastic wrap and let rest for another 30 mins.
  • Sprinkle some flour on the workspace and by using a rolling pin, form 1/4 inch thick pita bread.
  • Do the same for the remaining balls also. Let them rest for another 5 mins.          

How to cook

  • Meanwhile, heat a cast-iron skillet or tawa over medium-high heat and brush some oil.
  • Once it is hot, place the pita bread on hot skillet and cook until it begins to puff up and the bottom has brown spots and blisters.
  • Flip it, cook for 2 mins and flip back to original side, cook for another 30 seconds.
  • Pita bread will begin to puff up and fill with hot air. Now remove from the heat and do the same process for the remaining.
