Ingredients
- 1&1/4 cup (165 g) all purpose flour
- 1/4 cup (30 g) almond flour
- 1 tsp (4 g) baking powder
- 1/2 tsp (2 g) baking soda
- 1/2 tsp salt
- zest of one lemon (grated) lemon zest
- 2 large eggs at room temperature eggs
- 1/2 cup (120 ml) any flavorless oil
- 3/4 cup (180 g) at room temperature full fat yogurt
- 1 cup (200 g) white sugar
- 1 tsp vanilla essence
Instructions
- Preheat the oven to 180 degrees C. then spray an 8-inch springform pan and line the bottom of the pan with parchment paper.
- In a wide bowl whisk together all the dry ingredients until combined.
- In another bowl whisk together the eggs, oil, yogurt and vanilla essence until incorporated.
- Then stir in the sugar.
- Add the wet ingredients to the dry flour mixture and stir until combined.
- Then pour the batter into the prepared pan.
- Bake it in the preheated oven for about 40 to 45 mins or until a toothpick inserted into the center of the cake comes out clean.
- Remove from the oven and place on a wire rack to cool.
- Finally, Sprinkle some powdered sugar on top.
