- Unsweetened cocoa powder: To enhance the mild chocolate flavor of red velvet cupcakes, add 1 tbsp of unsweetened cocoa powder to your batter.
- Buttermilk: The secret to a moist and tender crumb lies in buttermilk. If you don't have buttermilk on hand, don't worry! You can make your own by combining 1 tbsp of vinegar or lemon juice with 1 cup of milk. Stir until well combined and let it stand for 10 minutes before using.
- Food coloring: Use high-quality liquid red food color to add the signature red hue to your cupcakes. If you prefer powdered food color, simply mix it well into the buttermilk.

Red Velvet Cupcakes with Cream Cheese

Ingredients
- 125g sifted cake flour
- 1/4 teaspoon salt
- 10g cocoa powder
- 1/4 teaspoon baking powder
- 60g unsalted butter
- 150g white sugar
- 1 large egg
- 1/2 teaspoon vanilla essence
- 120ml buttermilk
- 1 tablespoon liquid red food color
- 2g baking soda
- 1/2 teaspoon white vinegar
- 113g cream cheese
- 30g unsalted butter
- 1/2 teaspoon vanilla essence
- 175g powdered or icing sugar
Instructions
- Preheat oven to 180 degrees C and then line 12 muffins tin with cupcake liners.
- In a wide bowl sift together the flour, salt, baking powder and cocoa powder until combined and keep it aside.
- In the bowl of your electric stand mixer or with a hand mixer, beat the butter until soft and creamy for about 1 to 2 mins at medium-high speed.
- Add the sugar and beat until light and fluffy for about 3 mins. Scrape down the sides of the bowl in between.
- Then add the egg and beat until incorporated.
- Pour the vanilla essence and beat until combined.
- Meanwhile, mix together buttermilk and red food color in a measuring cup until incorporated and keep it aside.
- With the stand mixer on low speed, alternately add the flour mixture and buttermilk to the butter mixture, in three additions, beginning and ending with flour.
- In a small bowl, mix together vinegar and baking soda and allow the mixture to fizz and then fold quickly to the cake batter.
- Divide the batter evenly among the 12 muffin cups immediately and smooth the tops with a spoon.
- Bake it in the preheated oven for about 18 to 20 mins or until a toothpick inserted in the center of the cupcakes comes out clean.
- Remove from the oven and cool it on a wire rack for about 10 minutes and then remove them from the pan and let cool completely before frosting.
- In the bowl of your electric stand mixer or with a hand mixer, beat the cream cheese and butter until smooth.
- Add the vanilla essence and icing sugar and beat until fluffy and silky. (2 to 3 mins from low to high speed)
- Use a star decorating tip to pipe the frosting on the cupcakes.
