Whole Wheat Banana Bread

Ingredients

  • 1 cup whole wheat flour
  • 60 grams chopped walnuts
  • 75 grams white sugar
  • 1/2 tsp baking powder
  • 1/8 tsp baking soda
  • 1/8 tsp salt
  • 1/2 tsp cinnamon powder
  • 1/4 tsp dry ginger powder (optional)
  • 1 egg lightly beaten
  • 55 grams unsalted butter, melted and cooled
  • 2 medium sized bananas (225 grams) mashed
  • 1/2 tsp vanilla essence

Instructions

  • Preheat oven to 180 degrees C. Then butter and flour7-inch loaf pan and keep it aside.
  • Then place the nuts on a baking sheet and bake it for about 8 minutes or until a nice aroma comes. Let it cool and then chop coarsely.
  • In a wide bowl, mix together the flour, sugar, baking soda, baking powder, salt, cinnamon powder, dry ginger powder and nuts until combined and keep it aside.
  • In a medium-sized bowl, combine the mashed bananas, egg, melted butter and vanilla essence, mix well until combined.
  • By using a rubber spatula, gently fold the wet ingredients into the dry ingredients until combined. The batter is thick and chunky. Don't over mix the batter.
  • Scrape the batter into prepared pan.
  • Bake it in the preheated oven for about 55 to 60 minutes until bread becomes golden brown or until a toothpick inserted in the center comes out clean.
  • Place on a wire rack to cool and then remove it from the pan.
