Whole Wheat Banana Muffins are a healthy breakfast. A fruit-filled delicious and yummy muffin that kids are sure to love! Whole wheat banana muffins are made with whole wheat, bananas and green apples and have very little sugar as well! The fruits tend to bring up the sweetness of the muffin so be wise when adding the sugar. All in all, it’s a yummy muffin to eat at any time of day! Furthermore, I would like to share some of my suggestions for making healthy whole wheat banana muffins. Firstly, mash the bananas and sugar with a fork or a masher until smooth. You can also mash them in a blender. 1/4 cup sugar makes the muffins just sweet, but if you want more sweetness then add 1/3 cup. Secondly, you can also use melted and cooled butter instead of oil for more richness. Finally, temperatures in the oven may differ, so do keep a check when baking. Just bake until a toothpick inserted in the center of the muffin comes out clean and the tops should be golden.

  1. 1&1/2 cups (180 g) whole wheat flour
  2. 1 tsp baking powder
  3. 1/2 tsp baking soda
  4. 1/4 tsp salt
  5. 1 green apple          Wet Ingredients
  6. 2 large bananas (260 g), chopped
  7. 1/4 cup (50 g) white sugar
  8. 1/2 cup oil
  9. 1 tbsp fresh lemon juice
  10. 1 tsp vanilla essence          For Topping
  11. 3/4 tbsp (10 g) white sugar
  12. 1/2 tsp cinnamon powder          Instructions
  13. Preheat oven to 190 degrees C then grease 12 nonstick muffins pan and set aside.
  14. Then peel and chop green apple finely and keep it aside.
  15. In a small bowl, mix together 10 g (3/4 tbsp) sugar and 1/2 tsp cinnamon powder until combined and keep it aside for further use (topping).
  16. In a wide bowl, add chopped bananas and sugar.
  17. Mash the bananas by using fork or masher until it becomes smooth.
  18. Then add 1/2 cup oil and whisk it well with a help of a wire whisk.
  19. Also add in vanilla essence and lemon juice and mix well.
  20. In a separate wide bowl, sieve whole wheat flour, baking powder, baking soda and salt until combined.
  21. Then add chopped green apple pieces to the flour.
  22. Then gradually add the wet mixture to the dry mixture and mix gently with a help of a wire whisk.
  23. By using spoon or ice cream scoop, fill the muffin cups up to 3/4th of its height, evenly.
  24. Then sprinkle topping mixture on top of the muffins equally.
  25. Place it in the center rack of the preheated oven and bake it for about 20 to 25 mins or until a toothpick inserted in the center of the muffin comes out clean.
  26. Then transfer to a wire rack and let cool for about 10 mins before removing from the tray.
