Ingredients:         

Dry Ingredients

  • 1&1/2 cups (180 g) whole wheat flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 green apple          

Wet Ingredients

  • 2 large bananas (260 g), chopped
  • 1/4 cup (50 g) white sugar
  • 1/2 cup oil
  • 1 tbsp fresh lemon juice
  • 1 tsp vanilla essence          

For Topping

  • 3/4 tbsp (10 g) white sugar
  • 1/2 tsp cinnamon powder          

Instructions

  • Preheat oven to 190 degrees C then grease 12 nonstick muffins pan and set aside.
  • Then peel and chop green apple finely and keep it aside.
  • In a small bowl, mix together 10 g (3/4 tbsp) sugar and 1/2 tsp cinnamon powder until combined and keep it aside for further use (topping).
  • In a wide bowl, add chopped bananas and sugar.
  • Mash the bananas by using fork or masher until it becomes smooth.
  • Then add 1/2 cup oil and whisk it well with a help of a wire whisk.
  • Also add in vanilla essence and lemon juice and mix well.
  • In a separate wide bowl, sieve whole wheat flour, baking powder, baking soda and salt until combined.
  • Then add chopped green apple pieces to the flour.
  • Then gradually add the wet mixture to the dry mixture and mix gently with a help of a wire whisk.
  • By using spoon or ice cream scoop, fill the muffin cups up to 3/4th of its height, evenly.
  • Then sprinkle topping mixture on top of the muffins equally.
  • Place it in the center rack of the preheated oven and bake it for about 20 to 25 mins or until a toothpick inserted in the center of the muffin comes out clean.
  • Then transfer to a wire rack and let cool for about 10 mins before removing from the tray.
  • Now tasty whole wheat banana muffins are ready to serve.
