Okra/Vendakkai stir fry is a simple South Indian recipe. In this recipe, okra is roasted with onions and green chilies until browned. It is a great side dish for rasam and sambar with rice. So try this okra stir fry and share your comments!

Okra Stir Fry

I make this vendakkai/okra stir fry at least once in a week. Because this okra has lots of health benefits. It helps to improve our memory power. So some mothers even give the raw lady finger to their kids. It also good for diabetics. So try to add this in your diet in either form of stir-fry or in the form of sambar.

Furthermore, I would like to give some of my suggestions and tips for a perfect okra stir fry. Firstly, Wash the ladies finger well then pat it dry with a kitchen tissue. Then cut off the head and tail and then cut them into small pieces as shown in the picture. Don’t cut too small as it will become sticky. Some people avoid this vegetable because of its slimy nature. Adding ghee makes the slimness out of the okra and makes it crispier. Some people add curd or lemon juice to get rid of the slimness.

Secondly, you can also add red chili powder or sambar powder instead of green chilies for a spicy dish which is suitable for sambar. Finally, you can cook this dish as you like. If you want it to be crispier, then cook it for longer. But don’t cook it for a too long of a time – 8 to 10 mins are good enough to fry in order to get its nutritional benefits fully.

  1. okra/vendakkai/ladies finger -300g, cut into thin rounds
  2. green chilies -2, slitted
  3. medium sized onion -1/2, thinly sliced
  4. salt -1/4 tsp
  5. oil -1/2 tbsp
  6. ghee -1 tsp
  7. mustard seeds and urad dal -1/2 tsp          Instructions
  8. Heat a pan with oil over medium heat. When the oil heats, add mustard seeds and urad and fry until spluttering.
  9. Then add sliced onion and green chilies, fry until the onions are translucent.
  10. Further add okra and saute for one minute.
  11. Then add salt and stir fry for another 5 mins.
  12. Keep stirring it now and then for even cooking.

Ingredients

  • 1/4 tsp salt
  • 1/2 tbsp oil
  • 1 tsp ghee
  • 1/2 tsp mustard seeds and urad dal

Instructions

  • Heat a pan with oil over medium heat. When the oil heats, add mustard seeds and urad and fry until spluttering.
  • Then add sliced onion and green chilies, fry until the onions are translucent.
  • Further add okra and saute for one minute.
  • Then add salt and stir fry for another 5 mins.
  • Keep stirring it now and then for even cooking.
  • After 5 mins add ghee and saute till the okra gets nicely browned.
