Broccoli Soup

Ingredients
- 3 cups broccoli florets
- 1/2 cup chopped spring onion, whites and greens
- 1 tbsp olive oil
- 3 garlic pods, finely chopped
- 2 cups chicken broth /vegetable stock /water
- 3 teaspoon butter or coconut oil
- 1 tablespoon corn flour
- 240 ml (1 cup) milk
- to taste ground pepper
- to taste salt
Instructions
- Heat a medium-sized saucepan with olive oil, when the oil heats, add chopped garlic and spring onion whites and greens and saute until tender.
- Then add broccoli florets and broth, bring it to a boil, cover and then simmer for 10 mins or until the florets are tender.
- Cool down it for few mins then pour them into a blender, puree the mixture until smooth.
- Then return to the saucepan and reheat.
- Meanwhile, melt one tbsp of butter or coconut oil in a small saucepan over medium heat, saute the flour for few seconds or until it turns light golden brown, then add milk.
- Stir continuously until thick and bubbly, and add this mixture to the soup.
- Finally, season with salt and pepper.
- It is served best when it is hot and with some croutons on top, for a crunchy and refreshing taste.
