Here are some tips for making the perfect blackberry ice cream. First and foremost, try to use fresh berries whenever possible. But if you're using frozen berries, there's no need to thaw them first. Another tip: keep your stand mixer bowl and whisk attachment in the freezer for about 30 minutes before whipping the cream. This will help you achieve a higher volume of whipped cream, resulting in a creamier ice cream. And lastly, let the ice cream sit at room temperature for about 10 minutes before serving for the perfect texture.

Creamy Blackberry Ice Cream

Ingredients
- 150g Fresh Blackberries
- 1 tbsp White Sugar
- 1 tbsp Water
- 1/2 cup Sweetened Condensed Milk
- 1 cup Cold Heavy Whipping Cream
Instructions
- Wash blackberries properly. Heat a small saucepan, with berries, sugar and water over medium heat, cook and stir continuously for about 5 mins or until the berries break down. Then remove from the heat and strain through a metal strainer to remove seeds and cool completely. Once it cools, keep it in the refrigerator.
- Meanwhile, by using an electric stand mixer or hand mixer, whisk the whipping cream on high speed for about 2 mins or until soft peaks are formed. Then add condensed milk and the berry sauce, whisk it gently. Then pour it into an airtight container and close the lid, place it in the freezer for about 6 hours or overnight. Keep it at room temperature for about 10 mins before serving.
- Scoop the ice cream into a bowl and finally, garnish it with some fresh berries.
