Ingredients

  • 2 chicken breast pieces (300 grams)
  • 1 cup mixed capsicums, diced
  • 1 medium-sized onion, cubed and layers separated
  • 2 tbsp olive oil          

For Marination

  • 2&1/2 tbsp yogurt
  • 1 tsp ginger and garlic paste
  • 1 tsp red chili powder
  • 1/4 tsp turmeric powder
  • 1/4 tsp cumin powder
  • 1/2 tsp garam masala powder
  • 1/2 tsp coriander powder
  • 1&1/2 tsp crushed dried fenugreek leaves
  • 3/4 tbsp fresh lemon juice
  • 1/2 tsp salt or as needed
  • 1 tbsp olive oil          

Instructions

  • Clean and cut the chicken breasts into medium size, then pat dry with kitchen tissues.
  • In a separate wide bowl, mix together all the ingredients given under marination until incorporated.
  • Add in chicken pieces, mixed capsicums and diced onions, mix well until well combined and keep it aside for about one hour.
  • After one hour, separate the capsicums in one bowl and diced onions in another bowl.
  • Now heat a nonstick pan with olive oil, when the oil heats, add the marinated chicken pieces with marinade and stir fry for 3 to 5 mins or until both sides turn into light golden brown.
  • Also add the marinated onions and fry for another 3 mins or until they become transparent.
  • Then add marinated capsicums and fry for 2 more mins or until half cooked. Don't over cook, because capsicums and onions should be crunchy.
  • Now tasty kadai chicken is ready to serve.
