Marinating the Chicken

  • Start by marinating 3 boneless chicken breast pieces in a mixture of ginger, garlic paste, lemon juice, red chili powder, turmeric powder, garam masala powder, and salt. Let the chicken marinate for about 30 minutes to allow the flavors to penetrate the meat. This step is crucial for infusing the chicken with a blend of aromatic spices, resulting in a more savory and flavorful taste.

Making the Mango Salsa

  • While the chicken is marinating, prepare the mango salsa by combining chopped red onion, red and orange capsicums, green chili, fresh lemon juice, coriander leaves, diced ripe mango, and salt. Allowing the salsa to sit for 10 minutes allows the flavors to meld together, creating a vibrant and zesty topping for the tacos. The sweetness of the mango, combined with the other fresh ingredients, provides a refreshing contrast to the spiciness of the marinated chicken.

Assembling the Tacos

  • Once the chicken is marinated and the mango salsa is ready, it's time to assemble the tacos. Heat a non-stick pan and toast the corn tortillas until cooked. Then, layer the tortillas with baby spinach leaves, the cooked marinated chicken, mango salsa, and crumbled feta cheese. The combination of textures and flavors in each bite will leave your taste buds delighted.
