For marination

  • 450g boneless skinless chicken thigh pieces
  • 1/3 cup fresh orange juice
  • 1/4 cup lite soy sauce
  • 1/4 cup honey
  • 1 tsp lemon juice
  • 2 tsp red chili flakes
  • 1 tsp grated fresh ginger
  • one tsp sesame oil          

For cooking

  • 1 tbsp olive oil
  • 1 tbsp butter
  • White sesame seeds and spring onion greens for garnishing

Instructions          

How to marinate the chicken

  • In a wide bowl, combine soy sauce, orange juice, honey, lemon juice, red chili flakes, grated ginger and sesame oil, whisk together all marinade ingredients until combined.
  • Cut the chicken into 1-inch pieces, place into the marinade, then mix it well and keep it aside for 20 mins.          

How to cook the chicken

  • Meanwhile, heat a nonstick pan over medium-high heat, add in olive oil.
  • Then, remove chicken from the marinade with a slotted spoon (reserve the remaining marinade in the bowl itself for further use) and add it to the hot pan and saute or cook well until browned.
  • Then remove the pan from the heat and transfer the chicken to a bowl.          

How to prepare the sauce

  • Pour the reserved marinade to the pan, then add butter and place back over medium-high heat, stir continuously and bring it to boil.
