The second marination is essential as it adds more flavor to the dish.

Grilled Chicken Kebab with veggies

Ingredients
- 300 grams 2 boneless chicken breast pieces
- 1 cup diced mixed capsicums (red, green and yellow)
- 1 onion diced
- 3 wooden skewers
For first marination:
- 1 tsp red chili powder or paprika powder
- 1/4 tsp turmeric powder
- 1 tsp fresh lemon juice
- 1/2 tsp salt
For second marination:
- 3 tbsp yogurt (I used low fat yogurt)
- 1&1/2 tsp ginger garlic paste
- 1 tsp red chili powder
- 1/2 tsp coriander powder
- 1/4 tsp cumin powder
- 1/4 tsp turmeric powder
- 2 tbsp olive oil
- 1/2 tsp garam masala powder
- 1 tsp fresh lime juice
- 1 tsp crushed kasoori methi / dried fenugreek leaves
- 1/4 tsp salt
For brushing:
- 2 tbsp olive oil
- 1/4 tsp red chili powder or paprika
Instructions
- Clean the chicken breasts well and then cut into medium sized pieces.
- Then marinate the chicken pieces with the ingredients given under the first marination, mix well until well coated and set aside for about 20 minutes.
- Mix all the ingredients given under the second marination in a wide bowl until incorporated.
- After 20 mins of the first marination, take the chicken pieces, diced capsicums and diced onions and place them in the second marination bowl and marinate them for more than 1 hour.
- Meanwhile, soak the wooden skewers in water for about 15 to 20 mins.
- Preheat the oven for at least 15 mins at upper grill mode.
- Then place the aluminum foil on the baking tray.
- Insert the chicken pieces and the veggies alternately into the skewer and discard the extra marinade.
- Then place the skewers on the baking tray.
- In a small bowl, mix red chili powder and olive oil well.
- By using the cooking brush, grease the chili oil on the chicken pieces.
- Then grill the chicken for 15 mins.
- Flip the skewers, repeat brushing the chili oil and grill for another 10 more mins or until cooked through.
- Now grilled chicken kebab is ready to eat.
Notes
- Adjust the grilling time based on your oven, keep an eye on the chicken all the time because it might get charred if you overcook it!
