Ingredients:

  • 2 cups thick Idli batter
  • 1 /4 cup rice flour
  • 3/4 cup jaggery
  • 1/4 cup water
  • 1/4 cup chopped coconut
  • 3 to 4 cardamoms
  • A pinch of salt
  • A pinch of baking soda
  • Water as needed
  • Oil or ghee as needed

Instructions:

For Batter:

  1. In a small saucepan, add powdered jaggery and water, boil until thick. If your jaggery is not clean, melt it with water. Filter and boil until thick. Then cool it. Keep it aside.
  2. Add chopped coconut and cardamoms in a mixie jar and grind until coarsely. Keep it aside.
  3. In a bowl, add Idli batter and rice flour, mix well.
  4. Then add jaggery syrup, mix well.
  5. Add salt and baking soda, mix well until combined.
  6. Finally, add the grated coconut mixture and mix well. Add some water and mix well. Now the batter is ready.

How to make Sweet Paniyaram:

  1. Meanwhile, add a few drops of ghee to all the moulds of the paniyaram pan. Heat up well.
  2. Turn the heat to medium and fill the moulds to ¾. Cover and cook over medium heat.
  3. Once the bottom starts browning, using a skewer or spoon, flip it over gently to the other side.
  4. Cook the other side uncovered until golden brown. Keep an eye on it as it will turn brown very quickly.
  5. Remove from the heat and serve sweet paniyaram hot or cold.
